HEALTHY TACO SALAD
Nutritious Ideas:
• Meat: Use lean ground meat or turkey or Tempeh for vegetarian option
• Leafy Green Base: Any hearty greens will work (Romaine, Iceberg, radicchio, and/or spinach)
• Fresh Toppings: Tomatoes, avocado, onion, jalapenos, cilantro, fresh salsa, low-fat shredded cheese, corn, black beans
• Swaps: Use Greek yogurt for sour cream, swap tortilla strips for roasted chick peas
Sample Recipe:
• 8oz 96% lean ground meat browned with low sodium taco seasoning
• 7.5oz black beans, drained and rinsed
• 1 cup sweet corn
• 1 cup cherry tomatoes, halved
• 1 cup low-fat shredded cheddar cheese
• 4 cups Romaine lettuce
• ½ cup fresh salsa
Cook ground meat and toss with above ingredients, drizzle with fresh lime juice and enjoy!!
Makes 2 servings with 40 grams of protein and 405 calories each
